When I first read this message from my sister-in-law, there was some eye-rolling. Was a pressure cooker really deserving of an entire email? Turns out, it is. I bought my own cooker a few months later and soon realized that it has certainly saved me some serious kitchen time.
Although pressure-cooking has been around for over 300 years, many modern moms never consider purchasing their own cookers. (A recent poll of some of my mother friends showed less than half own one.) Now I use mine weekly and have found more and more recipes dedicated to this device. Using the power of steam, pressure cookers preserve flavor and nutrients, save energy, and make quick work of any type of food, from beans to veggies to meats and even desserts. I’ve discovered the joy of making an entire meal—potatoes, vegetables, and chicken—by using a cooking rack inside the pot.
Unlike many time-saving kitchen gadgets, pressure cookers are really affordable. A good one will run you around $100; and many come with 10-year warranties, so that’s money well spent.
