Acorn Squash Puree
A simple puree of acorn squash is perfect for beginning eaters.
- 2 acorn squash
- Halve and seed the acorn squash.
- Place, cut side down, in a buttered baking dish. Cover and bake at 400 degrees F until tender, about one hour.
- Cool, then scoop out the pulp.
- Put in a blender and puree until smooth.
